The Ideal Water Temperature for Drinking Yerba Mate
One of the most common mistakes when preparing yerba mate is using water that’s too hot. If you’ve ever tasted mate that was bitter or burnt, chances are the water temperature was the reason.
Let’s keep it simple and get it right ☺️
So… What Is the Ideal Temperature?
The ideal water temperature for yerba mate is between 70°C and 80°C
(that’s 160°F to 175°F).
This temperature range:
- Brings out the natural flavors of the yerba
- Prevents bitterness
- Protects the nutrients in the leaves
- Keeps your mate smooth and enjoyable

Why Not Boiling Water?
Boiling water (100°C / 212°F) is too hot for yerba mate and can:
- Burn the leaves
- Make the mate extremely bitter
- Shorten the life of your yerba
- Irritate your mouth and throat
In short: boiling water ruins the experience.
How to Get the Right Temperature (Without a Thermometer)

No thermometer? No problem.

Here are a few easy tricks:
- Heat the water until small bubbles start to form at the bottom of the kettle, then turn it off
- Let boiling water rest for 5–8 minutes before pouring
- If steam is strong and aggressive, it’s still too hot
With practice, you’ll recognize the perfect moment.
Does Temperature Change the Flavor?
Yes, very much.
- 70–75°C (160–167°F): Smooth, mild, and aromatic
- 75–80°C (167–175°F): Stronger flavor, still balanced
- Above 80°C (175°F): Bitter and harsh
Choose your temperature depending on how intense you like your mate.
A Final Tip
Never pour hot water directly onto the bombilla at first. Start with a little warm water to protect the yerba, then continue with hot water at the ideal temperature.
Mate is a ritual, not a rush 🧉 Take your time and enjoy every sip.
